Our strange "Diet"

People that meet us or already know us think we're really weird.  Especially how we eat.  They think we're on some diet and soon we'll come back to reality.  We have changed our lives, however, and are not going back!  In July 2010, I started a job a DBC Natural Holistic Health Center (a Chiropractor and Natropatic doctors office).  We became patients and I started to get educated on nutrition and wellness.  Jason had been diagnosed with Bi-Polar a few months before (see Victoria's birth story:  http://freeindeedvanhorn.blogspot.com/2013/03/victorias-birth-story-3-20-2010.html)

Jason knew he had always been dairy sensitive, but usually ate cheese and dairy products anyway.  Then he found out he has Leaky Gut Syndrome: http://en.wikipedia.org/wiki/Leaky_gut_syndrome.  A condition that lead the doctor to believe he was most likely sensitive to gluten as well.  He was on a number of prescription drugs at this point and had gained about 60 pounds in a few months time.  His moods were still not regulated great, and he didn't feel like himself.  He felt numb.  He worked carefully with Dr. den Boer to do a detox and help heal his gut over the next months.  He added supplements and took all dairy and gluten out of his diet.  A few months later he did a food sensitivity test and realized he is sensitive to eggs as well.  Here is a video of Dr. den Boer explaining "The truth about gluten": http://www.youtube.com/watch?v=IU6jVEwpjnE

I learned how to cook all gluten and dairy free.  As I learned more, I gathered tons of recipes and saved them in a binder.  We watched a bunch of documentaries about whole foods and the food industry.  Wow did we learn a lot! I read books on GMO and organic foods.  We learned about how much healthier and easier it was to eat all whole foods instead of gluten-free alternatives to packaged foods.

We now eat all whole foods, with the occasional tortilla chip and rice chex thrown in.  People focus on the gluten and dairy free aspect...but we try to explain to them that it's more about whole foods and eating as many veggies as we can!  We have both lost a lot of weight and feel healthier than ever.

Most recently we discovered Victoria's food sensitivities as well.  We always knew she said her tummy hurt, but now we know them for sure.  We are trying soy, gluten, dairy, egg, and peanut free with her.  Luckily we had already been eating mostly this way already.  She is growing up eating more fruits and veggies than most kids we know!  We feel great that we are teaching our kids a new healthy lifestyle.
